Sorry it took so long but here is what some of you have been waiting for;)
Deluxe Chicken Club Dip (serves 16)
1 cup chicken, cooked and shredded 1 cup light sour cream 3/4 cup mayo 11/4 cup shredded colby jack cheese 1 cup cooked bacon , chopped into little pieces (or buy real bacon bits) 1 cup finely chopped tomato (roma works best, more flesh less seeds) 1/2 tsp onion powder 1/4 tsp salt lettuce for garnish crackers, breads, or veggies for dipping
Combine chicken, sour cream, mayo, 1 cup of cheese, 3/4 cup of bacon, 3/4 cup of tomatoe, onion powder and salt together in a mixing bowl. Refrigerate for 1-2 hours for best blend of flavors. To serve, arrange lettuce leaves in center of platter or line a serving bowl of choice with the leaves, spoon dip onto lettuce (or in center of lettuce if using a bowl) Garnish with remaining bacon, cheese and tomatoes.
This is also a fabulous sandwich spread.
